For years I have made the same thing for Christmas breakfast. The casserole is easy, the rolls are warm and fresh! I precook the bacon and freeze it so all I have to do in the morning is pop the casserole and unbaked rolls in the oven, slice a few pieces of fruit, heat the bacon in the microwave and 35 minutes later, yummy!
Green Chili Bake
10 eggs
4 cups shredded jack cheese
2 cups cottage cheese
1/4 cup butter, melted
1/4 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
2 - 4 ounce cans chopped green chilies, drained
Preheat oven to 350 degrees. Lightly oil a 13x9 baking dish. Beat eggs in a large mixing bowl. Stir in cheese, cottage cheese, butter, flour baking powder, salt and chilies. Pour into baking pan, and bake 35 minutes or until the eggs are set. Cool for 10 minutes. Serve 8 to 10 for brunch, 12 to 16 as an appetizer.
Pull - Apart Coffee Cake
1 package dry yeast
1/4 cup warm water
1/2 teaspoon salt
1/4 cup sugar
1/4 cup salad oil
3/4 cup warm milk
1 large egg
About 3 1/2 cups flour
1 cup raisins
1/2 cup butter, melted
Cinnamon-nut sugar (recipe follows)
In a large bowl, sprinkle yeast over water, let stand to soften about minutes. Stir in salt, sugar, oil, milk and egg until blended. With a dough hook or spoon, stir in 3 1/2 cups of the flour until smooth.
To knead by hand: scrape dough onto a lightly floured board. Knead until smooth and elastic adding flour as required to prevent sticking, about 10 minutes. Knead in raisins.
Divide dough into 3 equal pieces, then cut each into 16 pieces. Shape segments into balls, roll in butter, then in cinnamon-nut sugar. Stagger balls, barely touching, in layers in a greased 9 -10 inch ring mold. Sprinkle with remaining cinnamon-nut sugar and remaining butter.
Cover llightly with plastic wrap and let rise in a warn pace until puffy, about 45 minutes. (OR chill until puffy about 16 to 18 hours) Bake in a 350 degree oven until well browned, 30 to 35 minutes.
Cinnamon-nut sugar: Stir together 3/4 cup sugar, 1 Tablespoon grond cinnamon, and 1/2 cup finely chopped walnuts.
Another tradition that continued this Christmas Eve was the opening of ONE package. This package is always chosen by the mother in the family. My mother allowed us to open a package on Christmas Eve, I allowed the girls to open a package on Christmas Eve, and now the Grandchildren are allowed a package to open on Christmas Eve. Strange it's always the same gift!
